Low Calorie Banana Pudding Cake

A Delicious Guilt-Free Dessert

This yummy cake is much lower in calories than most, but still has a moist, soft texture.

This low calorie Banana Pudding Cake is two layers of fluffy, creamy goodness, and has only around 320 calories. The original version of this cake has a whopping 500 calories! That is a savings of 180 calories.

This cake has been made for birthday parties, but it also makes a great any-day dessert. To make the recipe more quickly, simply use two boxes of sugar free yellow cake mix. It tastes the same and has about the same amount of calories.

INGREDIENTS:

PREPARATION:

  1. Preheat the oven to 350 degrees.
  2. Prepare the banana pudding as directed on the box and set it aside. Cut the bananas into slices and set them aside, as well.
  3. Next, add all of the dry ingredients together and mix them well. Make sure to blend out all of the lumps.
  4. In a separate bowl, mix all of the wet ingredients (except for the pudding and bananas) together.
  5. Mix the dry ingredients into the wet ingredients, using a blender, if needed. Make sure that there are no lumps and that the batter is smooth.
  6. Pour the batter into two round, greased baking pans and put the pans into the oven for 30-38 minutes until done. You can test to see if the cakes are done by poking the cake in the center with a fork. If the fork comes out clean then the cake is done. If it comes out with wet cake sticking to it, bake the cake for five more minutes and check it again.
  7. If the cakes are done, let the them cool. This usually takes about an hour.
  8. When the cakes are cool, place one of the cakes on a platter. Smooth half of the banana pudding onto the cake. Add the slices of bananas to the top of the cake, as well.
  9. Place the second cake on top of the first and cover it with the rest of the banana pudding.

Quick Tip: Kids love this cake decorated with animal crackers, which is also low calorie. For even more fun, use food coloring to dye the banana pudding before you put it on the cake and decorate with sugar free candies. You can also add other kinds of fruit for a tropical taste.
